Il coltello in s uno dei migliori coltelli da Chef europei, forse il migliore di questa tipologia. Ho scelto il professional s e non il Pro per il design pi accattivante del primo anche se il s condo, non avendo il codolo al tacco offre maggiore superficie di taglio. Cosa che comunque non mi dispiace tanto poich gi possiedo altri coltello da Chef a lama full cut. Dal punto di vista della funzionalit in cucina, che dire…. e’ Zwilling….

I have the same knife in the non-S edition. It is an excellent, knife but I ordered the S edition based upon reviews that I read in other locations. Those reviews were entirely accurate. This knife is very very sharp, cleans easily, it is a pleasure to use.

Feels great to use! Fantastic weight in the hand, retained sharpness as long as I expected for a knife if this price, if not longer. Bought it for a chef who’s worked in kitchens for 10+ years. Tengo muchos cuchillos, alguno Zwilling como este, con varios aos, y sigue igual, no tenia este modelo, el clasico, es el cuchillo de chef por excelncia. Mango bien realizado, equilibrado, algo grande y pesado, hoja de calidad con tallado decreciente. Un afilado de calidad superior, no se vende nada que corte mejor…. igual puede, pero mejor lo dudo. El precio de Prime Day era muy bueno, lovale de. sobra el cuchillo. No lavar en lavavajillas ni con estropajo, guardarlo bien, pasarle la chaira cuando se desafile y secarlo despues de lavar. I’ve bought various knives over the years and this is the one I always go back to. Nicely balanced and can do a whole meal with just this one knife. Steel is good , but not too hard – so you get a good balance between edge retention and ease of sharpening.

This 8″ Henckels forged knife is the go-to knife in the kitchen. I bought it to replace a 18-year-old version that had a handle failure. Henckels has promised to replace the original knife under their lifetime warranty. Awesome. In the meantime I couldn’t get along for a day without this knife. Since its brand new its ultra-sharp. I have to remember how sharp these Henckels knives are – can cut skin in a second.
There are other designs for an 8″ that allow your hand to pinch the blade. Not my style

Es ist sehr scharf und diese Eigenschaft hlt auch lange an.
Es liegt sehr gut in der Hand, das Gewicht ist ausgewogen verteilt und der Schnittschutz an der Klinge ist auch vorhanden.
Fr mich eignet sich dieses Kchenmesser perfekt. Und ist ein toller und verlsslicher Helfer in meiner Kche geworden, egal ob fr Fleisch, oder Gemse oder Obst, alles was ihm vor die Klinge kam schnitt es klein…

I now have four Zwilling J A Henckels kitchen knives (this one, a santoku, a small paring knife, and a bread knife) and they’re all excellent. ‘Pro’ Tip: If you’re going for a magnetic wall strip, get one that’s all wood on the outside to avoid accidental damage to the cutting edge when placing (as might happen if there’s a metal strip for it to ‘bang’ against).

Fantastic knife! Deadly sharp, not a tool for the novice, I recommend you google how to use one before you try to chop anything with it.
This knife is a pleasure to use, has a nice heft to it. I wash it by hand and store it back in the box so it stays nice and sharp.

Bin ich richtig zufrieden, und wie! Sogar Zwiebelschneiden ist jetzt keine Schwierigkeit mehr. Die Schneide ist super, so wird der Zwiebel nett geschnitten und nicht zerquetscht. Falls sie ein Messer kaufen wollen, nehmen Sie diesen.

Ach und an alle das Messer wurde nach Gebrauch stumpf, tja das ist halt normal, ein Reifen vom Auto wird auch nicht besser! Vorteil bei Messern ist, dass man sie schrfen kann! Ich nutze dafr einen Wetzstahl.
Dies ist mein drittes Zwilling Messer und ich wurde bisher noch nie enttuscht!

Simply a joy to use. It’s a very traditional knife, with a good, heavy weight, but it is perfectly balanced. I have average sized hands and it is very comfortable to hold and use. It’s also quite amazingly sharp – sharper than most razors you will find in supermarkets!

I first ordered the professional S mode by Zwilling before I finally exchanged it with the profection mode. And I think I need to point out that my comment is aimed at providing some of my opinions about the these different two knifes I ordered.
To put a disclaimer before I start, my review only reflects my opinion as an amateur cook and non-expert of knives, so if you are an professional chef (although I don’t think you’d be needing a 8 inch knife you are one) and a connoiseur of blades you may not find the informations I provide to be very useful. On the other hand, if you are looking for a good knife to use in the kitchen and your expectation of the knife is a solid, good-looking, decent and handy tool, then I’d be glad my review could help you choosing.
Initially there were four knives I put into consideration, Zwilling Professional S and Profection, and Wustof Classic and Classic Ikon. I tried the Wusthofs about their weight and feel at a local store but since I didn’t buy them and actually try them at home, I couldn’t comment on how their performance could be apart from that I found the alleged improvement on the Classic Ikon handle and bolster seems didn’t make me feel much better than the ones on the Classic line (when the advance of sharpening is not considered). Actually, as I hold them using pinch-grip when I put them in my hand with some rocking-motion on the cutting board on display (it was the one on top of which they let you play with their knives) and I actually found the Classic Ikon seems to be handle heavy than the Classic. But I could see why the Classic Ikon line boasts the new handle design as it does feel quite comfortable when you hold the knife on the handle without pinching the blade. So it still does make me see much more advantage in the handle to justify the additional 20 euros as when you use pinch-griping the knife a significant portion of the handle would be in your palm, at least for someone who has small hands like me.
So about the Zwillings. They definitely both good knives, but I’d give the profection a edge (or two?) over the Pro-S which is much more traditional in its design. The difference in shapes of the blade and the bolsters actually make quite significant difference on their cutting performances.
The profection feels much more comfortable when you pinch-grip it and the control it enhances is quite obvious an improvement (notice lots of people who doesn’t know about pinch-griping or use more both the middle and index figure on the blade, if you do so then the profection could be quite uncomfortable), while the professional S is the least comfortable in bolster amongst the four as its transition from the blade to the handle is the least soft and most angular (although by not means as angular as you might think) amongst the four.
The cutting performance is quite different as well: the profection makes the use of the middle part of the blade much better than the traditional design which makes jullienning much more at ease. It actually feels like as if it has a twist of santoku, while definitely a chef in most part. While the pro-s is throughly a western styled knife which most people are used to. But the draw back is the profile of profection makes it less good at mincing garlic using the cross-chopping less smooth than the pro-s as the curveture on the profection makes the tip-to-bolster motion harder to establish than the less curved pro-S (or in that regard, the wusthofs). Instead I found out the best way of mincing garlic using this one is by rapid chopping (which I like very much faster). Also the length of the rocking motion you could exert on the profection seems to be shorter than the pro-s due to the same problem, but its designer completely make up the shorter cutting trail (I’m not using the right word, I guest?)by making the middle part of the blade wider–it actually leads to incredible neat cutting performance (due to the added weight on the middle part by the width?) once one pass the initial three minutes adaptation. Another thing which made me to opt for the profection is the width of its blade allows the knuckles feel the knife much better than the pro-s (and the wusthofs)–especially when you are using the first half of the blade (my knuckles were constantly in touch with the blade which makes me feel much safer). I can certainly see why zwilling claims the new blade design is fusion of western and eastern knives.
About the handles: the blade on profection is the same as the ones on the twin pro and the twin 1731 (a much more expanse knife more suitable for collection), but the twin pro has a traditional handle just like the pro-s, which is thinner when you grip it (although I never hold the twin pro). But I like the design of the profection better as it is more chic. Somehow if you have really small hands like some small girls, then I’d say the handle on the profection may be a little bit on the thick side for a solid grip.
Conclusion: if you are an amateur cook or a someone who has been/is/going to a lot of work in the kitchen and looking for an affordable good knife under 100 euros, than I’d think the profection is indeed a good choice. Also, if you also like to make international cuisines (esp. Chinese/Japanese) but opt for a chef instead of a santoku, then the profection (or the ones with similar blade design) may be ideal for you (it’s like two knives in one, lol.). But if you are so used to the traditional, less curved western (esp. german) knives and do not want to change you habit a bit then look for pro-s or wusthof. In addition, I found the pro-s to be a little bit handle heavy for my taste. Also, they both are sharp enough (though not up to the sharpness of the japanese ones), although I heard the blade angle of the profection is 30 degrees, and 40 degrees on the pro.
One last words: Pro-S has high CPR, but the additional 20 euros justifies the profection.
Sehr tolles Material und eine super Qualitt, angenehmes Gleichgewicht, wahnsinnige Schrfe und das auch nach 8 Monaten Dauereinsatz! Bisher komplett rostfrei. Uneingeschrnkt empfehlenswert!

There’s a reason that Henckels is one of the oldest knife manufacturers in the world; they know exactly what they’re doing. I’ve been using their products for nearly twenty years and have never had cause to complain. The Professional “S” range is particularly good; well balanced, sturdy with a fantastic edge. I can’t recommend them highly enough!

zum Lieferservice von Amazon muss man eigentlich nichts sagen. Super wie immer!
Jetzt zum Produkt: Das Positive vorweg, dieses Messer ist wirklich gut verarbeitet und scharf ist es auch! Liegt gut in der Hand und das Gewicht ist stimmig. Preis/ Leistungverhltniss stimmt, aber jetzt leider zum etwas negativen Punkt, welcher mir leider ein wenig zu spt aufgefallen ist. Warum?! Fragt mich bitte nicht, habe es einfach zu anfang bersehen. Vorne an der Spitze der Schneide habe ich jetzt 2 kleine Ausbrche entdeckt! Von mir sind sie nicht verursacht, da ich das Messer noch nicht viel benutzt habe und wenn dann nur fr Tomaten bis jetzt. Herunter gefallen ist es auch nicht. Bei einem Messer das ursprnglich fast 90 kostet, erwarte ich das sowas gerade bei einem Messer nicht der Fall ist. Die Ausbrche sind recht klein, aber man kann sie mit dem Auge erkennen, somit achtet bitte beim Kauf immer darauf wie die Schneide ist. Ansonsten super Produkt wie gesagt!

As an engineer by profession (amateur cook) I know that a knife is all about the blade, and the blade is all about the steel. I knew from independent reviews that this steel was good. I wasn’t prepared for how beautiful this knife is. An extemely well finished product. A real pleasure to use. I hope that the edge survives its first sharpening (with an engineer’s care).

Ich habe das Messer nun schon mehr als 7 Jahre und benutze es fast tglich fr alles was man in der Kche so schneiden muss, aber insbesondere Gemse.
Durch die Gre und Ausgewogenheit lsst sich Gemse sehr klein, schnell, gleichmig und mhelos schneiden.
Die Breite und Gre der Klinge sind optimal. Durch die Breite erreicht man mit den Fingerknchel nicht das Brett. Das ist mir sehr wichtig.
Die Schrfe im Neuzustand war so ungewhnlich, dass ich mich sofort geschnitten habe. Mit den Jahren stumpft es natrlich deutlich ab. Alle 2-3 Jahre lasse ich es professionell schrfen, und alle paar Monate mache ich das selbst. Danach ist es wieder fast wie neu und jedes mal wieder Vorsicht geboten.
