The Dalstrong Origin Story

Dalstrong was established in 2014 by our CEO David Dallaire, who is the mastermind behind the brand and designs. Based in Toronto, Canada, Dave takes his inspiration for our knives from pretty much anywhere you can imagine — landscapes, infrastructure, history, movies, art, and more. Every proprietary design seeks to push the boundaries of innovation, leveraging the collaboration of our global team to get a just-right knife into your hands.

In 2015, Dalstrong Inc was incorporated in Canada, followed by the United States in 2019. Since then, Dalstrong has aggressively expanded our culinary business around the globe. In 2017 we entered the European markets, and currently have warehouses located in the US, Canada, and the UK, with plans to open new warehouses in the Netherlands.

Dalstrong professional chef knife manufacturing process

Technology, Meet Tradition.

Our glowing reviews aren’t a coincidence — they’re the result of our commitment to quality, starting with the primary materials we use.

Every line of knives sources premium steel from Japan, America, Germany, Sweden & China.

These premium imported materials are painstakingly assembled by expert bladesmiths in a state-of-the-art facility within YangJiang, China — a city with a renowned knife crafting tradition dating back over 1400 years.

These highly trained craftsmen spend anywhere from 30-60 days on each knife, painstakingly hand-polishing and hand-finishing the blades and handles using the 3-step Honbazuke honing method.

This traditional Japanese process is married with high-tech processes such as Cryo-tempering which improves the steel’s crystalline structure (making them stronger). This merging of modern technology allows us to achieve exceptional quality while keeping the costs of our knives lower for our customers.

Where are Dalstrong Knives Made?

Every single one of our knives is painstakingly assembled by expert bladesmiths in a state-of-the-art facility within YangJiang, China — a city with a renowned knife crafting tradition dating back over 1400 years. Today, Yangjian holds the title of National Capital of Knives and Scissors, exporting to more than 100 countries and accounting for 60% of all knife product exports in China.

Before we partner with any global organization, we seriously consider their stance on worker’s rights and eco-sustainability. It’s important to us that our partners align with our values. Our main manufacturing partners are certified ISO humans rights compliant, with 4 weeks of paid vacation for their employees per year and fair wages.

At our manufacturing plants, the artisans and lead foremen are on a personal mission to prove to the world that Chinese knife quality is world-class. As such, our factory proudly stands head and shoulders above all others in YangJiang.

Supporting Our Community

In addition to working directly with chefs, Dalstrong has partnered with various institutions to positively impact our communities and the culinary world at large.

By the end of 2021, we’ll have donated 1200 professional chef knives to the Careers through Culinary Arts Program (C-CAP). A workforce development nonprofit, C-CAP provides culinary, job, and life skills to middle and high school kids across the United States. A thirty-one-year-old organization striving to help further food and social justice, equity, and inclusion, they’ve served 350,000 students and distributed 62 million in scholarships to date.

Dalstrong is also proud to have joined both the Wounded Warrior Project and Wounded Warriors Canada. Both projects support veterans or first responders and their families, offering various support programs for community-building, mental wellness, physical wellness, career counseling, and independence.

Dalstrong believes that everyone has a responsibility to give back. That’s why we look to partner with chefs, pitmasters, culinary schools, grillmasters — anyone who wants to make a positive impact in their communities and the culinary world at large.

One of those incredible chefs is no other than Dominque Crenn, the first female chef to receive three Michelin stars in the US. Last year, when many restaurants were closing across the country due to the pandemic, we partnered with her foundation to support the homeless community in San Francisco. Through a donation of more than 200 culinary tools — including knives, aprons, and accessories — we’ve helped her foundation provide 2,000 plates a week to those in need.

So it’s a slicer for sure, I use it for pretty much a French Knife and it works well for just about everything I put it through. Tough, holds an edge, through bone, flesh, cooked, raw you name it.

Originally the knife came bent and had very little Damascus marks… I contacted Dalstrong and they had a new one sent to me right away and told me to keep the original. The replacement came and is gorgeous (also slightly bent but functional) they offered a refund for the 2nd bent knife but I do like it and all in all it was worth the money. Great service and a beautiful product but keep in mind it is produced in PRC and shipped international

I am not kidding you these knifes are sharp and with the fine packaging. Sort it out a lovely box delivered with a brilliant attractive knife. One strong point is to keep all of Dalstrong knifes away from the chopping board and use them for the meat and vegetables only as for their strong point is sharpness.

Great knife. Beautiful to look at. I got this for my son as he is getting bigger and bigger into smoking and grilling. This knife is very sharp and nice to use. So much I will be getting one for me. Very happy with this edge. You can’t go wrong with picking one of these up.

Like all Dalstrong or similar makes now, they do offer a lot compared to mainstream makes that are priced similarly for basic stainless steel however there are a lot of places can buy decent knives now and worth shopping around. These knives have gone up in price since they started so from price competition point of view it’s a little harder to recommend. What Dalstrong do have though is a massive range of styles and finishes that can’t get elsewhere. This knife is a good example, I’ve not seen a similar shaped one available and got at a very good price. Like the other Dalstrong knife I have it isn’t the sharpest I own but can be sharpened easily unlike a Global for instance and
does hold the edge relatively well. This knife is for meat and meat only, the shape and design means it doesn’t have to be very sharp to work. Haven’t tried it for carving yet but would probably work great on a joi

I’ve been after this for a while. I used it for the first time to break down a 2kg+ block of Sirloin in to individual steaks. The knife made the job very easy, allowed for a single pass cut to be made, resulting in nice clean steaks. If you find yourself breaking down big blocks of meat, this is what you need.

The weight of this knife is perfect for slicing brisket, or breaking down a large piece of meat from Costco into steaks. It is nice and sharp and cuts through like butter. This knife will last a long time from the strong construction. If you need to break down a large watermelon, no problem.

Incredible quality comparable, if not better, to other big brands
Sharp as it gets right out of the box and maintains an edge better than any knife I have and I have knives from Shun, Henckels, and Wstof.
If you’re looking for a very versatile and useful knife I highly reccomend i

Like all of the other SHOGUN Series knives from DALSTRONG, this one is beautiful as well.
Fit and finish is outstanding!!! Unlike the GLADIATOR Series this one is smooth, grip panels are perfectly fit. Just a great knife.
Very easy to handle for heavy meat butchering without causing hand fatigue.
ALL of my SHOGUN Series knives are amazing. I highly recommend them… But not so much for the GLADIATOR Series. If you are unsure about which to get, the SHOGUN are worth the extra money. Every penny of it.

Golden Review Award: 4 From Our UsersOne of the best knives I’ve ever had. Been in the restaurant business for over 35 years. Packaging the best, it tell a lot about a company and how they feel about there product in the way the package. Quality A+ no effort at all to slice peppers, tomatoes and zucchini. Beautiful balance, nice feel, this will be my new and only knifes I will use from this day on. Thank you Dalstrong for making and caring about your amazing knives.

Golden Review Award: 2 From Our UsersI’ve only used it once but so far, it is excellent. I prefer the traditional bull nose butcher knife over other designs and have quite a few of different brands and different steels. I do like the Damascus design as it has great eye appeal. The center layer is a premium super steel from Japan. I think this may become my go-to butcher knife.
I gave already begun replacing a few other knives in my kitchen with the Dalstrong knives.

Golden Review Award: 13 From Our Userslet me start by saying I’m hit or miss with Dalstrong products.

    This product: Slight miss

    The good:
    * Sharp out of box
    * solid weight behind the knife
    * solid blade, not flexible
    * Will be good for butchering

    The bad:
    * Uneven grind on tip. Probably a 70/30 on the tip if not worse. I’ll have to fix this on the wetstones.
    * Knock the star for this
    * Damascus looks engraved like all dalstrong shoguns

    Uneven grind
