Density

One cube of coal should be slightly heavier than the equal water density. This means that when dunked in water the coal should eventually fall to the bottom. When initially putting the coal in water it should float then after some time sink. If a coal has high binder level then the coal would sink to the bottom straight away, which is not good.

Ignition Time

When igniting the coal it should take from 7 – 10 minutes. When the surface is covered with a thin layer of ash it is ready.

The good charcoal must be burned with stable and persistent heat with the following characteristics:

Temperature and Flame stability: 40 – 45 minutes

Hardness: the charcoal is not easily breakable while burning

Surface temperature: around 320 ºC ( 608 ºF)

Middle temperature: around 350 ºC ( 662 ºF)

Less odour.

Drop Test

The charcoal must be hard enough so it will not be broken when you de-ash or when you hold it with tongs. You can see how hard the charcoal is by doing the simple trampling test:
