    Learning to safely handle your knife increases precision & efficiency in the kitchen. A hammer grip is the simplest & most natural way to hold a knife. Wrap all 5 fingers around the handle, making no contact with the blade. For more dexterity & control, consider the “pinch grip”. Wrap your middle, pinky & index finger around the handle.     I have 9 Shogun knives in my collection now and they all have lasted through a lot of meat and vegetables cutting and achieve a great cutting edge for the cost. Price verses quality I think these Dalstrong Shogun series offer the best value out there.
    People complain the Damascus pattern is not very evident but they obviously do not understand Damascus steel. It is subtly evident but it’s about strength and flexibility over showing off.
    The edge lasts well and I have only ever had to hone them up never actually needed to be sharpened or re edged yet which is testimony to the steel quality being used in these knives.

    Pros: Beautifully made, beautifully packaged, razor sharp, comes with loose sheath with locking pin to prevent it falling off. I am a mechanical engineer so the Rockwell hardness specification of 62 was the most important feature of this knife. This is way higher than any of the stainless steels, even the expensive ones that are on the market. They should hold their edges much longer as a consequence.
    Cons: The retaining pin is held on the sheath using a piece of pretty string. With constant use I am not sure how long this would hold up, but it’s easy to put your own string on should it wear out.
    Conclusion: I am absolutely delighted with this knife and it seems like a crime to take them out of its beautiful presentation box to use it.

    Comes sharp out of the box, but definitely could be sharper. I dice maybe 150 onions a day, and after I got used to the belly on this knife, it was a breeze! I got back maybe an hour ago and ran it over my 6000 stone and a strop, and honestly, it’s better than new! It glides through anything and is holding it’s edge really well. This is definitely worth the money and every chef in the kitchen found it comfortable to use, which is quite a rarity.

    Cons:
    I feel the spine of the knife could have been a little thinner and that’s it! I really love this knife!

    These knives were recommended to my by professionals. Dalstrong have an excellent customer service. The products arrive extremely well packaged. The knifes are absolutely razor sharp, high quality, well balanced, this is my 4th purchase and certainly won’t be my last. I cannot praise this company enough for its products and customer service. Well worth the money

    Golden Review Award: 2 From Our UsersThis knife seems very good. Great sharpness, however you expect that from a new knife.
    The knife seems very well made. However the photos make the hammer dents and folds and pattern show up much more than real life – would prefer these show up more like in the pics but that is aesthetics rather than quality of the knife.
    The sleeve does not seem very high quality as it is a hard plastic and does not feel very luxurious – main reason for the 4 star instead of 5 star rating.

    Golden Review Award: 10 From Our UsersShogun Gyuto 8 inch is the work of art. Great attention to detail for a knife that costs below 100 pounds. It was quite sharp out of the box but not sharp enough to shave with it. However after using Japanese King Whetstone 1000/6000 and a stropping block the blade became razor sharp. The good thing about the steel is that it sharpens very easily. I don’t think it hold the edge very long (given its HRC rating of 61-62) but I need to test it bit longer. This is hands down the most comfortable chef knife I’ve ever used. It’s nicely balanced with some weight to it but not too heavy.

    Golden Review Award: 4 From Our UsersI bought this as a gift for my partner as he is the Head Chef at an award-winning local restaurant.
    He was gobsmacked when he opened it at the very high quality visuals of the knife.
    There are two noticeable burrs left on the blade cutting edge, which is a bit of a shame considering I researched it in depth before deciding to purchase it, but I suppose with a proper sharpen and strop with the correct whetstone it’ll be ok (fingers crossed).
    I’ll update the review once it’s been put through its paces for a few months in a professional kitchen.

    Nothing to dislike, knife was exactly as described and super sharp. The packaging was superb and would make an excellent gift to any Chef or Chef orientated person. I really bought this on impulse, but I am very p[leased I did. I really recommend this item and the company that supplied it.

    I’ve had this knife for 3 months now, and I still love it as much as the first time I used it. It’s still razor sharp, comfortable to use and gorgeous to look at. This was my first investment into a high-quality knife, but I shall be buying more of the dalstrong shogun series in future.

    Been using this knife now for just over a month, only had to sharpen it properly once on a wet stone, the rest is a quick blast on the strop. Gets used every day at work and is a joy to use. Perfect finish & edge out of the box with good balance & handle is really comfertable with zero pressure needed, just let the knife do the work so to speak. Definatly worth the money when on sale. Will add more in a couple of months let you know how its holding up

    Golden Review Award: 5 From Our UsersIn view of positive reviews online (eg knife guru Burrfection on youtube), I decided to buy the Dalstrong. I was not disappointed. The knife is beautifully made and beautifully presented. So much so, that it almost seemed like desecration to use it for something as mundane as preparing food. However, use it I did (eventually), and discovered that it’s well balanced, very comfortable to use in either a pinch grip or by holding the handle, and cuts like a scalpel. The deep blade means there’s no risk of a finger getting caught against the sharp inner edge (no bolster on the blade). The sheath is an added bonus and very welcome feature. This knife will last a life-time.

    In use, the knife is quite heavy (heavier than (say) an I.O. Shen chef’s knife) and the handle is fairly bulky. It’s perfect for me, but my wife finds it a bit too too heavy and unwieldy, preferring a smaller, lighter knife. If you have small hands, you may prefer the 6″ version.

    In conclusion, I cannot recommend this knife highly enough. In fact, I like it so much, I have now ordered another Dalstrong knife!

    The knife arrived razor sharp. Push cuts on news paper no problem on any part of the blade, I will give a long term review after a few months but its safe to say this is the best knife you can buy for this price. The curve of the blade is great allowing you to smoothly rock the knife, with a definite stop at the end of each cut. The finish on the whole is excellent, only one minor issue was a burr where the bolster tapers to the spine which made it uncomfortable to use a pinch grip. I have since burnished and almost completely remove this.

    Golden Review Award: 2 From Our UsersThis knife is an absolutely pleasure to hold, its balaced like a dream it and has an ergonomic handle that is as smooth as can be and grips your hand. It cuts beautifully with an incredibly well finished bevel. I cant forget to mention just how beautiful the knife looks, I was stunned when it first came out the box, its also very well packaged with a few nice extras like a polishing cloth which I have used every time I’ve used my new knife.

    Dalstrong are beyond professional, they take love and care in their work, I plan on replacing all of my knives with Dalstrong, their customers service is also above question, it can be expensive but I can comfortably say it was worth every penny for me.

    This knife has been bought as a present so hasn’t been used “in anger” yet but what I can say is that it looks as good in the flesh as the pics. Comes well packaged in a presentation type box, sheathed in a protective pouch with a locking clip. I may even buy a Dalstrong for myself although I’m currently leaning towards a Santuko.

    Quality knife, to get it scarily sharp out of the box I did a few passes on a leather strop. The whole blade will push cut through paper now.

    I’ve used this knife for over 6 months and its my go to knife:

    The profile of the blade is accommodating for all styles. I use the heel portion of the blade to chop while the rest of blade you can easily slice or rock around.

    The edge retention easily beats other knives in my collection. During my ownership I’ve only sharpened this knife once on whetstones and will fortnightly strop on leather. My chinese cleaver, global or zwilling knives require more frequent sharpening and stropping in comparison under similar usage.

    I can wholly recommend this knife as an upgrade to your knife collection. Just don’t be as stupid as me and cut yourself not during food preparation but checking the sharpness whilst sharpening the darn thing + admiring the quality of finish.

    Golden Review Award: 4 From Our UsersThis is an exceptional knife. I carried out a lot of research before making choosing this knife. There is nothing else on the market of this specification for this price. It’s a great rocking knife due to the blade profile. The large blade depth gives plenty of knuckle clearance. The edge is sharper than any other knife I’ve used. The knife is still as sharp as it was when it came out the box and I therefore haven’t yet needed to sharpen it on a whetstone. I intend to prolong this situation by regularly stropping the knife on a leather stropping block – this hardly takes any time and is a easy to perform. I have contacted Dalstrong with questions about some of the other knives in their range and I must say that their customer service has been absolutely brilliant.

    I purchased one of these knives a few weeks ago and first impressions were very good, it was very well-made,very well packaged but unfortunately the blade was not as sharp as I had expected. After I sent an email to the manufacturer they agreed to send me a second knife free of charge.This arrived a couple of weeks later and I must say I’m very impressed with the second one much much sharper knife and just as well made and just as well packaged,customer services is second to none.

    For me, the most important feature of this knife is that it is really sharp; it slices through tomatoes, onions, carrots and meat with exceptional ease. Another test for sharpness that I tried was to swipe down on a vertically held pamphlet and magazine. I have a few other knives that give the impression that they are very sharp, but they fail on this test. Only the Dalstrong Shogun Series Chef’s Knife and my Yaxell Gou santoku knife are able to slice smoothly and cleanly through pamphlets. This test shows that the Dalstrong knife together with the Yaxell, excuse the pun, are a cut above the rest, but, out of the two knives, the Dalstrong seems to have the edge on sharpness. A significant added bonus, is that the damascus layering and tsuchime finish make the Dalstrong Chef’s Knife look attractive and distinctive. The knife came beautifully packaged. This knife is heavier than I would have liked, but it still handles well and I am beginning to appreciate that the extra heft can be advantageous when cutting tougher vegetables or big joints of meat. After having read some reviews, I was sceptical as to the authenticity of the damascus layering and about the materials used, so I wrote a list of questions to the Dalstrong company. The Customer Service was excellent: everyone of my questions was properly answered. I was satisfied with the explanations given; I was assured that the damascus layering was authentic and that these knives are not made by robots or assembly line machines.

    Scalpel sharp and beautiful to behold. I am confident that this knife is easily as good as any costing twice the price. I purchased mine July 2017, use it every day and sharpen it as necessary. It is as good today as when it was new out of the box.

    Like its longer brother and shorter Nakiri and Petty knife the craftsmanship that goes into these tools is truly remarkable, The shape and the depth of this blade makes slicing cutting and chopping a breeze. if i had to choose between this, its longer counter part Gyoto or its stubby chopper the Nakiri then I would choose them all which I did ! They are a perfect partnership. the only one I haven’t acquired yet is the Santoku as I have several others and yet justify another one.

    Golden Review Award: 12 From Our UsersAn exceptional knife. Due to the folded steel construction it does not ring like a high carbon steel blade, when tapped. Due to the encapsulated VG10 super steel centre it does go remarkably sharp though and it holds its edge better than any knife I have owned to date. The key to the sharpness is the honing angle its construction allows. I’ve not sliced through hot butter with it, but that’s how it feels. The quality and finish are top class and along with the performance help to justify the price. I was a bit hesitant spending what this product demanded but once I had received it and started to use it, I was in no doubt I had spent my money well. I once owned a ceramic blade and whilst it was very effective it proved to be very brittle and I chipped the edge. Further to that, it was nigh on impossible to recondition due to the extremely hard nature of the blade. Professional care was probably in order. These VG10 blades offer near ceramic qualities but without the drawbacks and can be managed at home with good stones and a little bit of training. A knife of this quality stands by it performance and this can only be maintained by proper care and attention. Any knife can be rendered ineffective over time so my recommendation would be to invest in a top quality water stone to complete your investment. I use the BearMoo 400/1000 water stone as a minimum and this produces excellent results prior to finer honing or polishing. My experience of the Dalstrong company has been nothing less than very welcoming and friendly with a very strong emphasis on product quality and customer satisfaction. Along with the knife, I recommend both of them most highly.

I am so surprised with how good this knife is its absolute quality from hilt to tip and sharp as a razor in between. I’m even more surprised that they’ve converted me off my precious globals it’s Dalstrong all the way from here on out. Dalstrong POWER!!!!
