Optimal flavour development

The flat lid developed by STAUB has a special moisture-retaining structure on its interior, ensuring continuous and natural basting of food as it cooks. Condensed moisture simply collects on the sides of curved lids without this special structure; with the Chistera lid from STAUB, it drips down on the lid’s textured elements for even distribution. The effect is enhanced by placing ice cubes on the lid.

Energy-saving cooking

The cast iron ensures optimum heat distribution and makes the cocotte an energy-efficient cookware option. First, heat the cookware for 5 minutes at one-third of the total power of your hob. Then you can use full power and heat the roaster up to 250°C. Thanks to the particularly long and even temperature retention, hot food stays hot for a long time even on the table, while cold food remains optimally cool.

High-quality enamelling

The interior of the cast-iron cocotte is coated with a matt black enamel which features a rough structure. This creates a perfect sear on your food and enhances the flavour of the fresh ingredients. With each use, fats season the roughened structure which, in combination with heat and steam, create excellent non-stick properties over time.     Poco hay que aadir. Cualquier cosa que cocines quedara bien. Obviamente es sobre todo para guisos y asados pero se pueden hacer arroces caldosos o melosos y usarla como plancha sin tapa. Trabaja con muy bajo consumo de energa y es muy eficiente en induccin. El peso es su nico inconveniente, hay que manejarla con cuidado

    Beste Pfanne ever!
    Um meine beschichteten Pfannen endlich mal rauszuschmeissen hatte ich schon lnger ein Auge auf eine Gusseisenpfanne geworfen. Sie ist toll, schwer, backofenfest mit und ohne Deckel – und das wollte ich haben. Man kann wunderbar per Herd die Temperatur regulieren je nach Gargut. Spiegeleier gehen genauso gut wie Angebratenes, ob Fisch, Fleisch oder Gemse. Fantastisch, die gebe ich nie wieder her! Sie hlt, einmal heiss genug, gut und gleichmig die Gartemperatur. Die Tropfenstruktur im Deckel funktioniert wunderbar, alles in der Pfanne wird gleichmig feucht gehalten. Das finde ich sehr praktisch.

    Superb!
    I bought this to go with my red Staub oval cocotte. So glad I did. As with my cocotte it’s beautifully made. It’s such a nice piece to prepare a meal for people and then place it on the table for people to help themselves. As with all cast iron cookware, it keeps the food hot for a long time! Can’t wait to add more Staub products to my collection over time.

    Sehr guter Bräte
    Besitze bereits eine Chocotte von STAUB. Bin auch mit dem Chistera sehr zufrieden.
    Der hohe Rand wirkt sich sehr positiv auf das Vermeiden von Fettspritzern am Herd beim Anbraten aus.
    Der hohe Rand war mitunter ein Entscheidungskriterium da diese beim Mitbewerber ca. 2cm niedriger ist.
    Klare Kaufempfehlung.

    perfecte pan voor meervoudig gebruik, spaghettisaus – stoofpotjes, groentegerechten enz. Je kan hem ook in de oven gebruiken. Zou er niet meer zonder kunnen. Ben ook een echte Staub fan!

    Endlich eine perfekte Pfanne
    Habe die normalen Antihaftpfannen satt. Jetzt habe ich diese Pfanne gekauft und alles ist super. Von Pfannkuchen bis Geschnetzeltes…..alles wird super. Es spritzt weniger Fett wegen dem hohen Rand. Die Wrmeverteilung ist super. Die Pfanne ist zwar etwas schwer, aber strt mich nicht. Man kann den Brter bzw die Pfanne auch fr den Grill und im Backofen verwenden. Von mir 5Sterne fr ein perfektes Produkt. Werde jetzt alle meine Pfannen ersetzen.

We have used it for stews, ratatouille and scalloped potatoes, for example, and it is also excellent for keeping freshly cooked blinis, pancakes or tortillas warm on the stovetop, too (with a very low heat) or in the oven, while you keep cooking the rest of them. The cherry color is not exactly the same as LC cherry, but they match nicely.

    I’ve had this pan about a month. Used it pretty much daily since then; it’s kicked the usual pans out of service. Mostly I use it for tomato-based sauces, but also for risotto, ragu, frying meat, vegetables, other sauces, etc. Haven’t yet used it for braising or in the oven. I use it on a gas stove.

    I cook for 3 people. Most common dishes for me are pasta dishes, where I make the sauce or condiment in this pan, then dump the pasta in when cooked to toss, and bring to the table in the same. Usually ~360 grams (dry) of pasta but sometimes 500. In both cases the size is perfectly fine and contains it without any danger of spilling.

    As far as cooking goes, it’s very good. I haven’t had any issues with things sticking. Now if you tried to cook eggs in there then I doubt that would work well, and I always use a bit (and often a lot) of olive oil or butter, and nothing has ever stuck. As comparison, I have another relatively cheap enameled cast iron pot, which I mostly use for baking bread but used to also use for cooking. I was never entirely satisfied with the way things cooked in there – soffrittos always felt like they were sticking a bit and steaming, and definitely any meat in there would stick. Granted, that’s also a normal height pot rather than a relatively low casserole like this. But soffritos always fry in here and never stick. Cleaning this pot is a breeze and comes up like new, whereas the other pot would always have stuff stuck in there which I couldn’t get rid of without major elbow grease.

    For frying meat, I only have experience in this pan with chicken thighs. When meat-side down, in plenty of rendered fat (from first cooking skin-side down), there was barely any sticking. The sticking may have actually been from the skin side anyway. The small bits that were stuck came off easily. There were some small residue marks left in the pan (looks like a slightly whitish stain, very faint), which also sometimes happens when I make risotto. Presumably if I did some targeted scrubbing I could get it off; instead, I know that when I next make a sauce, it will disappear after cleaning; and as I usually make sauces, it always comes up as new again. Nothing to do with the quality for sure, just something I’m noting. Same happens with a Mauviel stainless steel splayed pan I use for risotto as well.

    Back to the quality of the fry for a second: the chicken skins came out super smooth and crispy. Slightly different from when I cook it in my Lodge cast iron pans – I think maybe the skin is held in place more in this pan when skin-side down, whereas in the Lodge pan which is seasoned and therefore more “non-stick”, the skin is freer to shrink a bit. I’ll definitely do more meat frying in this pan to see how it performs, though Lodge is always my go-to for that.

    Heat distribution is decent. You really need to have an appropriately sized hob for best results. I have a wok burner on my stove, which is generally too powerful but I can get it low enough by turning it to an almost off position. When I use smaller burners/hobs, only the area above the flame is boiling (in a sauce). With the hob burner, the whole pan gets sufficient heat.

    Overall it’s a pleasure to cook with, and I’m already planning my next Staub purchase (a cocotte!).

    The braiser is top notch quality so there are no complaints there.

    However it is not all that easy to clean as the food does stick after cooking. Just something to keep in mind, in particular as you should avoid any abrasive cleaning method if you want to keep this for a long time.

    Dieser Brter erfllt alle meine Erwartungen.
    Er ist formschn, heizt schnell auf und ist vllig ohne Macken/Fehler bei mir angekommen.
    Bisher habe ich erst mal nur Pfannengemse und Fisch darin gebraten, aber schon das allein hat mich berzeugt.
    Der Brter sitzt aalglatt auf meiner Kochplatte (Ceran) auf, hat keinen Kippelboden und auch sonst
    finde ich nichts daran was es zu bemeckern gbe. Na und die Farbe erst…..einfach schn !
    Die Reinigung per Hand ist in ein paar Minuten erledigt, ein Tropfen l innen verreiben und er ist fertig fr den
    nchsten Einsatz.
    Ich bin happy .
    Das ist mein Ferrari unter all meinen Pfannen. ^^

    Ist zwar`ne Menge Geld; aber gute Wrmeverteilung u.-speicherung; gute Brateigenschaften; leider werden die Griffe(auch Deckel) sehr hei (man kann nicht alles haben !) auf jeden Fall alles in allem zu empfehlen !

    WOW, was für ein exelenter Topf
    So gut hab ich noch nie im Leben gekocht. Das ist mal die perfekte Wahl fr jeden Koch, ob Hobby oder Profi-Koch. Sehr gute Verarbeitung und sehr gute Wrmeverteilung. Das Gewicht muss man beachten, aber wer schon einmal mit Gusseisen gearbeitet hat, der wei das sicher auch. Schon der Deckel wiegt schon ber 2 kg. Da muss man schon gut und sicher zupacken und immer die Hnde schtzen, denn das wird schon alles sehr hei beim kochen und braten.
    Das Allerbeste aber ist, 30 Jahre Garantie auf die Produkte von STAUB. Das ist wirklich was fr’s ganze Leben. Und ich denke mal, die Teile halten auch noch lnger als 30 Jahre durch. Ich kenne das von meiner Gromutter, die hatte eine Gusseisen Pfanne und die ist heute noch in Gebrauch und lter als 50 Jahre. So gutes Essen macht man nur in so eine Pfanne auf direktem Feuer, was man heute leider kaum noch hat. Dafr braucht es schon einen echten Feuerherd. Aber auch mit den herkmmlichen Herden, kann man mit STAUB sehr gute Speisen zubereiten. Ich hab damit wirklich tolle Rinderbraten und Rolladen gemacht. Auch Steaks werden darin echt super und man kann es sehr schonend garen.
    Ich werde diese STAUB Produkte immer wieder kaufen, ich brauche noch Tpfe und werde bald hier auf Amazon auch noch weitere Teile kaufen. Hier jetzt meine Empfehlung. 5 Sterne.

    Sauteuse de trs haute qualit aussi bien en prsentation que pour la cuisson des aliments.Idale pour mijoter des plats en sauce car, grce au couvercle qui est trs bien tudi, les aliments sont arross en permanence pendant la cuisson.Ustencile de cuisine certes d’un certain prix, mais qui est amplement justifi.Je recommande.

    Ich habe die Gusseisen-Pfanne gekauft da sich bei unserer vorigen Bonn kchenprofu nach ber 14 Jahren langsam die Emailie abgelst hatte.
    Die STAUB Pfanne kommt in einem sehr schnen Rot und sehr guter Verpackung. Die Wrmeverteilung ist ebenfalls sehr gut wie bei den meisten Gusseisen Tpfen und Pfannen die wir haben.
    Die Verarbeitung steht den anderer franzsischer Hersteller in kaum etwas nach. Die Emailierung sieht sehr haltbar aus. Wichtig ist die Pfanne – wie bei allen – langsam zu erhitzen und nicht gleich volle Pulle.
    Zu Bemngeln gibt es kaum was oder es ist nicht so strend um die Pfanne abzuwerten. Zwei dinge fallen mir auf:

    1. Der Knopf / Deckelgriff knnte etwas grer sein da der Deckel schon schwer ist. Dies wrde einen besseres Greifen ermglichen. Ist aber nicht so gravierend.

    2. Der Deckel hat wenn er auf der Pfanne liegt (also die Pfanne verschliet) gut 3-5 mm Spiel. Der Innere Rand knnte ev etwas dichter anschlieen.
    Ich schtze man hat es so konstruiert um die enailie innen nicht am Pfanne Rand zu beschdigen.

    Insgesamt:
    Tolle Pfanne fr einen vertretbaren Preis hier bei Amazon.

    Est l’un de ma collection de ustensiles de cuisine de marque de France. Comme il est difficile d’utiliser un cookware en fonte maille, et de le connatre, je suis en utilisant des ustensiles en fonte des Etats-Unis et la Chine en attendant. Croyez qu’il peut cuisiner bien que la soupe de bouillie normalement besoin d’environ 5 heures, mais le fer cadt pourrait faire en 3 heures +. Quand je serai prt, je vais l’utiliser. (Utilisation de Google Translate. Peut avoir des erreurs grammaticales)
