    There seems to be a lot of confusion on the “Damascus” pattern for this piece. I just want to offer that if a damascus build isn’t etched in ferric chloride and darkened in something similar to coffee you don’t get the high contrast pattern like I’m sure some of you see on TV knife making shows and were expecting. A lot of low-quality damascus patterns like that which you would find at Wal-Mart have been processed in a way that tricks the nave eye. The one I received is definitely forged. It has a low layer count (50-70) but, it’s not stamped on there as some in the comments have claimed.
    So far the knife has held its edge well even through chopping bone and being dropped to hard tile. No, it’s not a custom Jason Knight, Steve Schwarzer, or Burt Foster knife. It’s not a Wusthof, William Henry or Henckels. BUT, it’s a decent knife. I enjoy using it.

    It’s a bit bigger than I’d anticipated and bigger than knives I’m used to! Managed to cut myself on the first carrot I chopped so it’s definitely sharp!

    I imagine in the hands of a better cook it’ll be excellent and with practice I hope I’ll get to keep all my fingers.

    Really impressed with the packaging and appearance and, all jokes aside, it is really comfortable to use and chip with. Found myself looking for excuses for chop heavy recipes.

    Really pleased.

    LaTim’s Chef Knife 9 Inch Professional,Japanese Style Kitchen Knife with Stainless Steel Blade and Ergonomic Handle.

    For the home/amateur chef, there is no need to spend a fortune buying highly specialised knives when there are exceptionally good budget knives available.

    La Tim’s is not a brand I have encountered before but this example shows they have a decent quality range. The knife overall measures14″ with the blade and stop 9″ and a cutting edge of just over 8″.

    It comes well packaged in a stiff card box and the blade has a plastic sheath with a small plastic guard at the point. The knife is well balanced and comfortable to hold. It is naturally very sharp and is versatile in it’s many uses — meat, vegetables, fruit etc. There is a small leaflet enclosed which (whilst somewhat amusing in it’s translation from Chinese into English) shows how to use the different knives in their range — not obvious as chefs learn this before they learn much else. As a result they do not injure themselves so a read will give you a basic idea how to use the various kitchen knives.

    For about 30, this is a very useful buy as it performs well when compared to similar knives costing over 100 and on that basis is recommended to anyone looking for a budget kitchen knife. The makers claim that being “carbon stainless steel” it will keep it’s sharpness much longer than one made from “normal” steel. Whether that is so can only be measured by time and use so we will see later. Not being an expert in steel and knife making I am not sure what carbon stainless steel is but the knife is sharp and performs well and for the moment, it’s all I need.

    The knife carries a two year warranty.

    I love a good knife…..this is a good knife! Obviously it’s super sharp and glides through whatever I’ve chopped. It’s really nice to hold and I find the thickness of the handle really comfortable. It’s well made, looks stunning and beautifully packaged. Nothing I do not like about this

    – Well balanced/weighted chef knife
    – Very well made, no lips/gaps where the wooden handle is attached to the knife
    – Handle is extremely comfortable in the hand
    – Incredibly sharp. Makes cutting all food a breeze
    – You may see the price and think it is expensive, but the quality of the materials and craftmanship lend itself to this knife being good value for money (26.99 at the time of the review)

    Cons:
    – None that I can find!

    I mus confess I am not familiar with “LaTim’s ” products, but after using this knife I will be explor8ng the range further. This is a large 9 inch knife, which I find ideally suited to filleting fish and cutting large joints of raw meat. I first thought it was overpriced but the old adage of “you get what you pay for” has never been truer. For the casual user it may be hard to justify the initial outlay but a pro will no doubt recognise the ergonomic and expertly crafted stainless steel properties.

    Golden Review Award: 3 From Our UsersThis is a really good quality chef’s knife made from German carbon stainless steel, and with a sensible 9 inch blade, and a 5.3 inch wooden handle, which is perfect for grip.
    I hesitated before ordering this, because I usually order Japanese made kitchen knives, which are a lot more expensive. However, I have to say this is superb quality, with a razor sharp cutting edge, and perfectly mimics the Japanese styling. It makes short work of cutting up raw meat, even slicing through smaller poultry bones with ease. It is well made, very comfortable to hold, and great value for money. In fact, it has me wondering why I paid three times the price for my last chef’s knife, because this is every bit as good.
    As somebody who does a lot of food preparation, I am really pleased with it, and happy to give it my recommendation. Super quality, super low price.

    This is a professional looking knife.
    Very nicely bablanced.
    The blade has a slight curve which makes it easy to it when chopping small dice.
    According to the leaflet it is a knife for cutting fish meat and vegetables.

    The box is shaped to protect it and the knife comes in a thin plastic blade sleeve and a very small plastic tip cover.

    The pattern in the metal of the blade is a striped effect, very narrow and regular, not the wave effect that is shown in the leaflet. You can see it quite plainly in my photo with the brand name on the knife blade.
    The metal is ‘German High Carbon stanless stell 4116’.
    The handle is ‘natural Golden wood’ very smooth and does not appear to be varnished.
    The handle is two part with the metal of the blade going through the entire length so it not likely to come apart.

    The small leaflet has some quick instructions on techniques for using the knife.
    I expect chefs and catering students already know them but for all us non chefs, they are quite useful.

    I like that it can be used for both large and small cutting techniques.
    The price seems very good.
    Would make a lovely gift ..

    I originally ordered this chef knife as a present for my dad but quickly changed my mind and kept it for myself. It is razor sharp straight out of the box and has a lovely Damascus pattern.
    I have never had a chef knife that is this sharp and hope it keeps for a long time.

    The look and the performance of the blade is fabulous. More attention could be given to the construction of the handle, as on my knife the metal tang is slightly proud of the wood creating an edge.

    This knife is seriously sharp. It is supplied in a presentation box in which we keep it as it is so sharp. It is a pity as no plastic protective guard is supplied as the knife is too tall to fit in a traditional knife block and it far too sharp to leave in a drawer unprotected. Maybe we have to think of mounting it on a magnetic holder.

    This knife is comfortable to hold and was ready to use right out of the box. We have able to cut both meat and vegetables with no problem whatsoever. It even slices through chicken bones with ease.

    The handle is really a work of art! The wood has a mottled pattern and the handle is securely attached by three chrome-effect rivets (I think these are stainless steel) which both complement and contrast with the wood at the same time. The wood is finished very well and is shiny and smooth in the hand.

    The knife washes well, though you do need to wash it with caution. The pattern on the knife blade also adds to the aesthetics of this knife. We believe that this pattern is also intended to get better results when cutting.

    In summary, this is a very sharp and beautifully designed knife. It has been an excellent addition to our kitchen and I can recommend it without hesitation.

    This LA TIM’S Professional Chef Knife made from Japanese VG-10 Stainless Steel, a fantastic knife. I like the Damascus pattern on the blade; It looks impressive.

    The total length of the knife is roughly 12 and a half inches, including 8 inches long blade. The handle is slightly curved, very comfortable to hold and gives me a firm grip while chopping, also firmly attached with the tang by using three rivets; it looks pretty durable.

    It forged very well; I don’t see any chipping or crack; it is very sharp and well balanced; I believe it can cut through anything.

    I like to watch “Forged in Fire” serious; the judges test the knives in many ways. That makes me push the blade, too; I tried to chop sugarcane and coconut, and the cut was immaculate. Also, chopping the meat was effortless, performed very well.

    It come in a nicely presented box, makes it very much giftable and offers excellent value for money for the quality and design of the knife compared to more expensive brands.

    I hope this review helps you to make a purchasing decision.

    This kitchen knife is made of VG-10 damascus steel. It’s an 8″ blade and extremely sharp. The handle has three rivets to keep the wooden handle securely on.

    Things I liked:
    * well balanced knife
    * comfortable to hold
    * incredibly sharp

    Overall, this knife has a rating of 60-62 HRC which in laymans terms means it will stay sharp for a long time but can become brittle and are difficult to sharpen. The user experience of this knife makes food preparation a joy to use.

    This is a most beautiful knife (which it ought to be, given the price). It’s well-balanced and feels good in the hand. The steel is, as far as I can tell, real Damascus steel – you can see the folding patterns. It’s very, very sharp, and just sinks through whatever you are trying to cut, whether that’s raw meat or vegetables.

    If you want a really, really good large kitchen knife, and you’ve got the money… you’ll like this knife. A lot.

    I really enjoy cooking, creating most dishes from scratch and with being vegetarian, this involves a great deal of preparation. Good quality kitchen knives are therefore an essential aspect when it comes to making life easier.

    Starting with the packaging, this knife arrived in a very sleek box with a magnetic sealing closure, creating anticipation of what was inside. The knife was well protected upon removing it from the box, a very good idea especially when it claims to be so incredibly sharp.

    The first noticeable aspect was the weight of it. Comparing this knife to others I already use on a daily basis, this one is much more substantial and I wondered if it might be a little too heavy for repetitive use

    The handle is very well designed being comfortable to hold and offering impressive control over the blade. Talking of the blade, it is the perfect length for a kitchen knife and has zero flex when in use.

    After a short period of use, the weight actually became no issue at all, the balance of the knife is exactly right for long term use, I soon became unaware of the increased weight and it is most definitely not a problem.

    So how does it do at actually chopping and slicing?

    In a word, awesome!

    The blade is so incredibly sharp, chopping onions was a breeze. It simply moves through the whole thing with very little effort. I couldn’t believe how well it sliced peppers with gravity doing most of the work because the blade is really that sharp.

    Raw carrots and potatoes were despatched with similar ease, equivalent to a table knife going through warm butter.

    Lastly, washing the knife is a simple process as there are no areas that can gather debris and the handle allows for total control.

    Would I pay this much for a kitchen knife?

    Initially I thought it was far too expensive, almost an indulgence rather than a necessity. However, having now used it for real, I would definitely purchase one of these. Think of it as a kitchen knife for life!

    If you or someone you know is an avid cook, purchasing this knife for yourself or them will be most welcome, it is truly stunning.

    Well worth 5 out of 5.

    This is an incredibly well made razor sharp premium steel kitchen knife. Another feature that really stands out is the very comfortable handle. Would make a great knife for a professional chef or someone who cooks a lot as it doesn’t cause any pressure points. Easily tackled everything I have cut so far. I knocked a star off as there seemed to be 1 deeper indent on the pattern on the blade right near the edge which looks like a fault, it was hard to photo this but it is very noticable. Addtionally it would have been nice if it came with a full knife sheath for safety. Would recommend.

    I am not exactly a chef, BUT I am someone who appreciates a good knife! I mean, I am addicted to the show “Forged in Fire” and I have always wanted an epic JAPANESE DAMASCUS KNIFE!! I am in awe at how beautiful this knife is, honestly it is quite stunning!

    67 layers of forged steel, it really is a sight to behold. AND it comes sharpened with an edge that will serve you well during an upcoming zombie apocalypse!!

    No complaints at all, I truly love this knife!!

    I’m loving this knife so had to write a review. I’m a huge fan of high quality knives and especially love Damascus steel.

    Damascus for those who don’t know is when makers take multiple layers of different hardness steels and forge weld them together. The result when dipped into some acid is that the different steels show up and create patterns in the work. Damascus in theory is hard, flexible and retains the edge longer.

    The knife comes razor sharp and after over a week of use is still as sharp as when I opened it. Just last night I was slicing bacon and it glided through it which stopped all the pieces sticking together.

    Be very careful – my wife already cut her finger while just handling the knife! Respect the sharpness!

    The handle is really beautiful. Its smooth and fells warm to hold. The overall knife balance is also great.

    Proud to keep this one on display in my kitchen. Highly recommended.

    So I have bought a Brazilian hand made knife before and I was really impressed – that was a few years ago. I found this and it was looking quite knife so I thought why not try it.

    It literally can cut paper like you see in the YouTube videos. It is pretty cool

    The knife is quite heavy which is great for cutting vegetables.

    I am impressed and it has the Damascus look and feel.

    Possibly buy another to gift to my brother.

    One warning it is sharp so consider when using.

    Definitely recommend.

    Golden Review Award: 8 From Our UsersThis knife is absolutely beautiful and the favourite of my three knives without question. To give you a bit of background, I’d previously bought an expensive knife that was falsely advertised as Damascus steel, It turned out to be a very heavy laser printed knock off. In hindsight, It wasn’t worth the price tag I payed for it. I then decided to buy a lighter 8 inch knife which just didn’t feel right either. This knife hoewever is top drawer and just perfect.

    The balance for a start is exactly where you’d expect, on the join from the handle to the knife itself, the handle is crafted out of two peices of solid wood, sanded down to perfection, It makes holding the knife incredibly comforteable. When the handle is wet, the wood goes darker in colour and the grip is slightly better as opposed to smooth, small touch but I find it very aesthetic, although this is an obvious sign this knife will need proper treatment to prevent the handle from degrading over time.

    Now moving on to the most import part, the knife blade. It’s made of high quality metal (V10 Stainless steel) which gives you the hardness of carbon steel but with the corrosion resistance of stainless steel. It is without a doubt the sharpest knife I’ve ever used, I managed to cut myself on my thumb quite deeply with the slighest graze. You can 100% Tell it’s genuine damascus steel, If you look closely in the pictures alongside this review, you’ll see the very slight 3d ridge, which could not be copied with a lazer printer and it clearly well forged. (sorry about the excessive amount of photographs, I find It just so pretty)

    Now… the toughness test. I’ve tested this knife on frozen goods; fruit, vege & all kinds of other kinds of materials, like cardboard and plastic. There is absolutely no sign of wear and tear to the blade, even after dropping it onto a tiled kitchen floor… which completely amazed me. Over a week of heavy use, best of all it makes quick and easy work of anything you’re trying to cut, the only downside is the fact It is shredded my plastic chopping board with lines. Will have to be investing in a decent wooden chopping board to get this knife in it’s element.

    This knife is a wonderful representation of how functionality and aesthetics can be perfectly combined. Clean, shiny and pretty damn sharp straight out of the box. The knife edge is razor sharp, so be very careful with it. There’s even a blade protector to keep the edge protected when not in use, but I personally keep mine in the box. There is a lot of craftsmanship that went into making this knife and I couldn’t be happier with it.

If not, it is the process used in forging that gives this wonderful finish on the knifes blade. But that’s not why I bought this, it was because, the knives I’ve been using for the last 20 years just aren’t cutting it any more….
    This blade is the sharpest I’ve ever used, unbelievably sharp. The first thing I used it on was to trim some green beans, you literally just had to roll the knife over them and it sank down and cut them.
    With it having a wooden handle, I won’t be putting it in the dishwasher, but a word to the wise, be careful with your fingers……

    So impressed I bought a second one as a gift!!!

    Golden Review Award: 6 From Our UsersAs a regular Masterchef viewer, I’ve always been intrigued by the large chef’s knife used by contestants for chopping, cutting and slicing. It makes prep work look so much easier. And as that is the very bit about cooking that I hate, I decided it was about time to treat myself.

    And I couldn’t be more impressed. This professional, Damascus steel beauty is a quality product through and through.

    The knife comes beautifully presented in a well made box, which can be used ongoing for storage to protect the blade. The knife looks as good as it feels, from the goldenwood handle to the high quality Damascus steel blade, which is razor sharp and perfect for every job. It is well weighted and balances perfectly.

    So far, I’ve tested the knife to make thin slices from raw pork steaks, for chopping fresh herbs, and for cutting up a pineapple. The ease with which the knife accomplishes these tasks has to be seen to be believed. I wish I’d bought one years ago.

    Price wise, I think this knife falls into the mid range category. For some people, 60-odd might seem a lot to spend on a single kitchen utensil, but I can guarantee this is worth every penny.

This one, just feels and looks like a good quality knife. I made a little video (that’s my job in real life) and I probably did not pick the best food to demonstrate the knife. I have used it almost every day since I bought it, I am loving it, but I wonder if it can even do better than what I use it for. So, in my opinion, this knife would be ace even for the more experienced cook or chef. I use it for meat and vegetables; it cuts through everything with ease. I especially love the feel of the wooden handle, it is smooth and makes me feel like a professional when I am using it.
